Who are we?

Goodmerch Pubs Ltd is an expanding independent pub group with two established sites, The Red Lion Tavern, Chipping Campden (in cooperation with Greene King) and The Navigation Inn, Wootton Wawen (in partnership with Stonegate Group).

We began trading late in 2025 and have expanded rapidly with a combination of food, drink, leasing rooms, parties and B2B tour commerce, achieving about £500,000 gross sales in our first eight months. We’re seeking to build out our commercial capability at group level as we go up.


The role

We are seeking a Commercial Manager to drive the top line commercial performance of both locations. This is a group level, strategic, analytical role, not a venue operations post. You will sit above the site General Managers, looking at pricing, margin, yield, forecasting and revenue growth rather than day-to-day operations. You will be reporting directly to the Director.


What you’ll be doing

  • Budgeting and predicting own group earnings for food, drink, room leasing and functions
  • Lead menu engineering, pricing architecture and GP% management
  • Manage rooms revenue at The Red Lion Tavern Dynamic pricing OTA vs direct channel mix RevPAR optimisation
  • Drive revenue growth in function, wedding and private hire across both sites
  • Build B2B partnerships with tour operators, coach groups and corporate accounts
  • Led supplier negotiations & category management for food, beverage, energy & services
  • Develop commercial dashboards from EPOS and till data (Power BI, Excel and equivalents) to support weekly trade choices
  • Use data analysis approaches to develop forecasting models for revenue, GP% and rooms occupancy
  • Identify opportunities to deploy commercial technology and analytical instruments across the estate
  • Commercial Due Diligence for the Acquisition of Pipeline Sites
  • Perform weekly trading evaluations and monthly commercial reporting to the Director

What we want to do

Have to have:

  • Bachelor’s degree (RQF Level 6) in Business, Hospitality Management, Commercial Management, Finance, Business Analytics or similar area.
  • 3+ years commercial, revenue management, category management or head-office analytical experience, preferably in a multi-site hospitality, retail or consumer environment
  • Demonstrated success in GP% management, pricing strategy, RevPAR and EPOS analysis
  • Strong Excel and data analysis skills (Power BI or Tableau)
  • Experience in working with EPOS systems, revenue management systems and forecasting methodologies
  • UK Drivers License (Full)
  • Right to live and work in the UK or eligible to be sponsored under the Skilled Worker route

Required:

  • SQL experience or business intelligence platform
  • Experience in revenue management of hotels or letting rooms
  • Multi-site commercial roll-out or acquisition experience
  • Understanding of licensed trade in the UK
